Calvados is a brandy (eau-de-vie) distilled from cider made from apples and pears grown in the orchards of north-western France. There are two regional variants on standard Calvados. Calvados Pays d'Auge, has further quality focused production restrictions. Calvados Domfrontais is made with a greater proportion of pears.
